Le masserie del Salento sono espressione di secoli di storia che ha portato gli indigeni a fortificarsi per proteggersi dalle innumerevoli invasioni che il Salento, da sempre, ha subito. Dal 1500, la popolazione subiva l'invasione Saracena e sentiva il bisogno di difendersi, le masserie sono diventate il fulcro della comunità. Organizzate come piccole città funzionavano perfettamente e garantivano il sostegno e la protezione agli abitanti. In quasi tutte le masserie era presente un frantoio scavato nella roccia (ipogeo) che serviva a produrre l'olio, indispensabile per l'alimentazione. Inoltre, tutte, avevano dei pozzi e particolari cisterne per la raccolta dell'acqua piovana che poi veniva riutilizzata. Adesso le masserie che accolgono il turista sono dotate di tutti i confort pur mantenendo quel fascino di imponenza e solitudine che si sono guadagnate nel tempo, svettando nelle campagne salentine.
